New EZ Dessert: 83 Calorie Cheesecake w/ Stevia & Almond Meal + Date Crust

I found a way to make a slice of cheesecake even lower than 100 calories. This is really skinny cheesecake. Using only one 240 calorie block of fat free cream cheese per pie makes this only 83 calories for a small piece (8 pieces per pie) and 111 calories for a large piece (6 slices per pie).

Ingredients for 2 pies:


3/4 Cup Almond Meal = 480 calories

5 or 6 Medjool Dates pitted = 100 calories

1/2 teaspoon Sweet Leaf Stevia = 0 calories

2 teaspoons of real Ceylon Cinnamon = 12 calories

Pie Mix

2 – Fat Free Cream Cheese at 240 calories each  = 480 calories

3 eggs = 210 calories

3 teaspoons real vanilla extract = 35 calories

3 teaspoons lemon juice = 10 calories

2 1/2 tablespoons SweetLeaf Stevia =  0 Calories

Total = 1,327 Calories for 2 Pies

664 Calories Per Pie = 83 calories small slice or 111 calories for a large slice

I recommend two toppings:

1) thawed frozen strawberries I call Thawberries maybe 25 calories pictured, and

2) Reddi Wip spray whipped cream, 15 calories per tablespoon

The picture to the right is 2 blocks of cream cheese in one organic graham cracker crust. The 800 calorie graham cracker crust adds 100 calories per slice; plus the 735 calorie pie mix.  The pie pictured is approximately 200 calories per slice for pie mix and crust, 60 calories in whipped cream, and maybe 25 calories in strawberries. About 300 calories as pictured to the right. So this new Really Skinny Chesecake pictured below easily cuts the calories in half.

The benefit of the almond meal and medjool date crust with stevia is no wheat and no sugar. In weight loss mode limit to one piece a day.

WARNING:  The Cheesecake General has determined that eating cheesecake could make you fat; do not make this dessert often if cheesecake willpower is an issue.  Justification:  This cheesecake is just the absolute least calories for damage control and probably a much healthier option than a tub of ice cream. : )


Add 3/4 cup almond meal, 5 or 6 Medjool Dates, 2 teaspoons of Ceylon real Cinnamon (or any store brand for color), teaspoon Stevia and grind together. Spoon out evenly into 2 buttered pie pans, use fork to smooth out then pat down lightly.  You can find these small food processors for $10 in Dollar Stores.

Almond Meal and Medjool Date crust ready to bake for a few minutes. Baking makes the crust doughy. Let the crust bake for 5 to 10 minutes in a preheating oven while you’re making the pie mix.

In a $29 Black & Decker Walmart food processor (was $20 five years ago) add 2 blocks of fat free cream cheese, 3 eggs, 2 1/2 tablespoons Sweet Leaf Stevia (uncut), 3 teaspoons lemon juice, 3+ teaspoons real Vanilla Extract. Blend together. Pour into the slightly baked pie crust. Pie crust is done when top edges brown slightly.

Spread the pie mix evenly.

Bake at 350 degrees 25 minutes. Start watching them at 20 minutes. I pull them out to cool when the tops start to crack. You could turn the oven to broil and brown the top between 20 and 25 minutes. Just keep an eye on them.

I like them just slightly browned like below. Let them cool on the counter. Then refrigerate to chill (several hours). For quicker chill time put them in the freezer after they’ve cooled for 20 to 30 minutes. My experience is the pie is best the next day or later. Somehow all the ingredients marinate together.

Use a little Reddi Wip real whip cream topping. 15 calories a tablespoon. Just cut back a little on daily protein servings to make room for real cream on desserts.

Thawed frozen strawberries make an excellent topping. Dump a small bag of frozen strawberries into a BPA free plastic or glass container. It takes 6 to 7 hours sitting on the counter to make thawberries. Then refrigerate.

Use Reddi Wip real cream topping with the Dark Blue Lid. It’s not pristine clean but much cleaner than the stuff in a tub.   15 calories per tablespoon.
