Paleo Breakfast Idea – Egg Sweet Potato Bake – Delicious

EZ Diet Note:  You could bake a couple sweet potatoes the night before. Slice open in the morning and add the egg and bake/reheat for 15 to 20 minutes.  One benefit of baking the night before is some of the sugar in the potato produced by baking will leak away from the potato overnight. This is delicious without the twice baked potato routine below. Or if you want more flavor, saute the onions, garlic and a little butter and just spoon into the opened sweet potato before you add the egg. It’s pretty good with just butter and baked egg, or sprinkle some Asiago grated cheese too.

It kind of reminds me of the old deep south breakfast option your mother told you to never do in public; chop up two runny over easy eggs on a pile of salted cheese grits, all mixed together. Looks disgusting but it was delicious : )

The process in preparing the baked potato is simple. These are the steps. Use a fork to poke a couple of holes in the sweet potatoes. Then, wrap them in foil and place in the oven. Bake for 40-45 minutes, until fork tender. Once cooked remove and set aside. Next, while the potatoes are baking, heat the coconut oil in a skillet over medium heat. Add the onions and cook for 5-7 minutes, until they are translucent. Add the garlic and sauté and cook for an additional 1-2 minutes, until fragrant. Remove from the heat and set aside. Meanwhile, when the sweet potatoes are done baking remove from the oven. Make a slit in the top of the sweet potato and remove most of the insides, leaving enough on the bottom and sides to keep the integrity of the potato. Place the sweet potato insides in a large mixing bowl. Add the sautéed onions and garlic. Season with salt and pepper to taste. Mix all the ingredients together until well combined. After that, place the filling mixture bake into the sweet potatoes, dividing equally. Then, use a spoon to create a well inside each of the sweet potatoes. Crack one egg in each well. After that, place the sweet potato back in the oven and bake for an additional 20-15 minutes, until the yolk is set. You can then now serve it well!
