54 Calorie Skinny Pumpkin Pie in Single Serve Stoneware Dishes

These single serve stoneware dishes are a better alternative to aluminum pie pans for baking, storing, and serving pumpkin pie. With these dishes I can add a couple teaspoons of crunchy granola topping instead of the doughy almond meal medjool date crust.  It’s also quicker to make when you can skip the crust step. You can mix and bake 10 of these in 30 minutes.

Here’s my Pumpkin Pie recipe that’s evolved from the Famous Pumpkin Pie recipe on the back of the small 15 oz. can of Libby’s Pumpkin.

15 oz small can pumpkin – this is the new organic Libby’s  – 180 calories
3 eggs – 210 calories
Real Sea Salt 1/2 tsp
Cinnamon 3 tsp – 24 calories
Ginger 1/2 tsp
Clove 1/4 tsp
Vanilla Extract 3 tsp 24 calories (added, not on original recipe)
1/3 can evaporated fat free milk – 100 calories
1 cup of Stevia in the Raw, or 2 tablespoons of SweetLeaf Stevia

Total 538 Calories divided by 10 pie dishes = 54 calories each

Bake pie mix in 10 greased single serve stoneware dishes for 15 minutes at 350 degrees. Remove and let cool.  It’s best the next day and after.

I sprinkle a teaspoon of Almond and Chia Seed Granola mix on the pumpkin pie (in place of crust) 25 calories.

Add Reddi Wip real whipped cream spray, 15 calories 2 tablespoon, 60 calories as pictured above.

Add one more teaspoon of Granola (25 calories)

Total: Pumpkin 54 + tsp granola 25 + 8 tbsp Reddi Wip 60 + tsp granola 25 =  164 Calories
