What’s the Best Way To Eat An Organic Sweet Potato? With Pie Crust & Cream

Peel an Organic Sweet Potato. Slice every inch. Then I quarter those 1 inch disks so you end up with 1 inch cubes. I steam the sweet potatoes for about ten minutes then start jabbing them until they’re soft, maybe 15 minutes total. The glycemic index is lower on sweet potatoes if steamed instead of baked. Baking changes the sugar in the sweet potato.

1/3 can evaporated milk, 100 calories
three egg, 70 calories
1 tablespoon of SweetLeaf Stevia, or 1 cup of Stevia in the Raw,
3 teaspoon Vanilla Extract, 36 calories
3 teaspoon cinnamon,
1/4 teaspoon Real Salt,
1 teaspoon Ginger,
1/2 teaspoon Clove
Organic Graham Cracker Pie Crust  880 (or use almond meal and dates)

321 calories for sweet potato pie mix
880 calories for pie crust

1,201 calories for whole pie

Large slice 1/6th pie  200 calories + 30 calories 4 tbsp Redi Wip 230 calories
Small Slice 1/8th pie  150 calories + 30 calories 4 tbsp Redi Wip 180 calories

I don’t recommend too many Organic Graham Cracker Crusts in your diet because of the sugar and the wheat. It’s the better option for skinny cheesecake and strawberry short the cake pie, but not for everyday. Maybe every other week.

Instructions:  Mix all ingredients well in a food processor. Bake pie mix at 420 degrees for 9 minutes, and 21 to 26 minutes (depending on size of sweet potatoes) at 350 degrees. Pull it out early if the top starts cracking open.
