Updated Skinny Pumpkin Pie and Skinny Cheesecake Recipe Ideas and Instructions

Watching the world destroy itself is always better with a slice of skinny pumpkin or cheesecake pie and a cup of hot coffee or tea.

These two pie mixes take care of that need I have for something creamy and sweet occasionally without all the calories and blood sugar spike.  There’s just enough sugar in the Reddi Wip spray cream and little bit of graham crackers to be enough. However there’s a lot of natural fiber to help block the effect of that small amount of sugar.

Skinny Pie Crust

The preformed graham cracker pie crusts you buy at the store are like 880 calories or 110 calories for a small slice and cost up to $3. I want to show you how to cut the cost back to just 60 cents and get the calories down to just 22 for a thin crust and only 36 calories for a double layer or 2 packs of graham crackers.

You can make your own for about 60 cents using 4 graham crackers and a tablespoon of butter. The preformed graham cracker crust is 110 calories a slice; the do-it-yourself graham cracker is only 22 calories (1 pack) and 80% cheaper. Most graham crackers are made with real sugar instead of high fructose corn syrup and no MSG. I’ve started buying these half pack boxes where I get 6 sealed 240 calorie half packs.  Each package is half of the old graham cracker size.  There are 6 packs in a box instead of 3. One box is enough for 12 thin pie crusts or 6 thicker pie crusts.

1 pack Graham Cracker =  240 calories  (the equivalent of 4 regular large graham crackers)  Use 2 packs for thicker crust.

1 tbsp Kerry Gold Butter (clean) = 100 calories

340 calories for 2 pies  divided by 16 small pie slices = 22 calories slice

340 calories for 2 pies  divided by 12 large pie slices = 28 calories slice

Directions:  Use a small grinder to turn graham crackers to crumbs. Add up to a tablespoon of melted butter or other oil. Combine in grinder then spoon into 2 greased or buttered pie pans. I do one here, one there with a regular small spoon and spread and pack after I’ve tried to sprinkle it even. It’s not enough to go up the side using just one pack. Best for weight loss or maintaining weight I’m limiting wheat and that little bit of sugar.

Skinny Pumpkin Pie

15 oz can organic pumpkin – 175 calories
2 eggs – 140 calories
Himalayan Sea Salt 1/2 tsp
Cinnamon 1.5 to 2 tsp – 12 calories
Ginger 1/2 tsp
Clove 1/4 tsp
Vanilla Extract 1.5 to 2 tsp 24 calories (added, not on original recipe)
1/3 can evaporated fat free milk – 100 calories (300 if whole can)
1/3rd to 1/2 cup Pyure Organic Stevia Blend  (equals 3/4 to 1 cup of sugar) This brand of Stevia and mixture has the least affect on blood sugar.

450 Total Calories

450 calories for 2 pies  divided by 16 small pie slices = 28 calories slice

450 calories for 2 pies  divided by 12 large pie slices = 38 calories slice

Directions:  Mix all the ingredients together in a Walmart $30 Black and Decker food processor.  Pour in the evaporated milk after you start blending to keep it from leaking out the bottom.

Bake pie mix at 425 degrees for 9 minutes, and 21 minutes at 350 degrees. Chill and enjoy.  It’s always better the second day and for up to a week it seems to get better.

Skinny Cheesecake Pie

2 blocks of Fat Free Cream Cheese –  240 calories ea = 480 calories

The slice in the small picture on the right used 3 blocks of fat free cream cheese and an extra egg.  Add 310 calories to make a thicker pie.

1 cup of Pyure Confectioners Organic Stevia* (or 2 cups of sugar) = 0 Calories

3 Large Organic Eggs – 70 calories ea = 210 calories

1 Tablespoon  of real Vanilla Extract =  40 calories

1 Tablespoon of Lemon Juice =  3 calories

Total 733 calories for 2 skinny pies

733 calories for 2 pies  divided by 16 small pie slices = 46 calories slice

733 calories for 2 pies  divided by 12 large pie slices = 61 calories slice

Directions:  Mix all the ingredients together in a $30 Black and Decker food processor.  Let it mix for several minutes to make sure you’ve mixed all the Pyure Stevia into the Cream Cheese so you don’t get raw cream cheese pockets. Put in a 350 degree preheated oven for about 25 minutes for 2 pies.  Add another 5 to 10 minutes for just one pie. When the top starts to brown pull them out.  Once out of oven let cool. After the pies have cooled you can quick chill by putting them in the freezer for 30 to 40 minutes for fast serving, or just refrigerate after they’ve cooled to room temperature.  The pie is better the next day after the ingredients marinate together.

It’s not exactly like real sugar cheesecake but its very close for less than 100 calories a slice.  Smothered in thawed frozen strawberries (Thawberries) and Reddi Wip topping make it a fairly healthy dessert.

* Notice this is Pyure’s “Confectioners” Stevia Blend which is like a fine powder and works much better for cheesecake.  The standard Pyure Organic Stevia is more granular and works fine for pumpkin and sweet potato pies. But it makes cheesecake granular.  My regular grocer has the granular Pyure but I have to order the Confectioners Pyure Stevia at Amazon or Walmart online.
