300 Calorie Weight Loss Meal – Chicken Veggie Stew

This is my go-to meal when I want to dial back calories for quick weight loss, or limit calories to make room for a larger meal later, or have more dessert, or for a red meat meal later. Red meat at 55 calories an ounce adds up in a hurry.

This is about 3 ounces of pre-grilled chicken breast (90 calories), 1+ cups of crock pot veggie stew (100 calories), a clean low-sodium low-calorie sauce (30 calories), clove of fresh garlic, and seasoning to taste. Plus a slice of Ezekiel Bread (80 calories). Total 300 calories and very filling.

Slice the chicken and add to a small frying pan, add 1+ cup of veggie stew, add sauce, garlic, seasoning, let heat until it bubbles, dump in a bowl and enjoy. Lightly toast a slice of Ezekiel Bread and save till the end to clean the last of the sauce from the bowl.

I’ve learned to only crock pot the sliced vegetables on low for 3 to 4 hours maximum, then turned off to cool, instead of the normal 10 hours, this keeps the squash firm, also notice I cut the squash thicker, so they stay together in the fridge for a week or two.
