Delicious Apple & Peach Crisp Recipe Using Stevia and Lucky Leaf Apple Filling

Watching the world literally going the hell is always better with a generous low calorie serving of apple crisp and whipped topping and either coffee or tea.

I’ve had this craving for apple, peach or strawberry pie but didn’t want to deal with all the flour crust and blood sugar glucose spikes.

I broke a toe last October and couldn’t use the treadmill without aggravating healing and more pain; as a  consequence I gained some extra weight. You can lose weight without exercise, but you can’t maintain weight loss without exercise. I’m 7 days into a new Ezekiel Diet weight loss period and back on the treadmill. In this first week, while having this dessert (in place of a fruit serving) twice a day, I’ve lost 1.5 inches off my depth, 2 inches off my chest and 1.5 inches off my waist.

In order to keep this as simple as possible I’m using the Lucky Leaf canned Lite Apple Filling with no sugar added. It uses sucralose as a sweetener but you can’t find a similar product using stevia.

This recipe uses:

420 calories – 2 cans of Lucky Leaf Lite Apple Filling  210 calories x 2

307 calories – 1 cup of Organic Oats

58 calories – 1 tablespoon of Molasses

300 calories – 3 tablespoons of organic butter

0 calories – 1/2 cup Pyure Stevia Blend (for 1 cup sugar)

1 tablespoon of cinnamon (more to taste)

I’m using an 8 X 8 glass baking dish so adjust to the dish you’re using.

Directions:  Preheat oven to 350 degrees. Butter the glass baking dish and dump 2 cans of apple filling into baking dish.  In a mixing bowl add the 1/2 cup of Pyure Stevia Blend (or 1 cup sugar) and 1 tablespoon of molasses and smash/mix together to make a low calorie brown sugar.  Melt the remaining butter. Add the cup of oats to the bowl and 1 tablespoon of cinnamon and melted butter. Mix thoroughly with a spatula.  Rake the oatmeal crisp topping out onto the top of the apple filling and spread evenly. Put in the oven for 45 minutes at 350 degrees.

This is approximately 120 calories if the 8 X 8 dish is cut into 9 servings, about the size of an apple. Add a little Reddi Wip topping and enjoy.

After years of research I’ve discovered this Pyure Stevia Blend has the lowest blood sugar spike. It’s more sweet than sugar so a 1/2 cup of Pyure Stevia Blend equals 1 cup of Sugar.

One problem I now remember with an apple or peach crisp is the oatmeal topping gets soggy after a day or two. It’s better to make a smaller serving, (one pie filling can) in a smaller dish and use it up in one or two day. Or, leave the oatmeal crumble topping off and just bake the pie filling in the buttered baking dish. Then sprinkle with an organic Honey and Oat granola per serving.

Peach Crisp:

You can achieve the same result using 2 cans of organic peaches (210 calories per can).  Use the same topping recipe above for the oatmeal crisp crumble.

Peach Filling Directions:  Remove the peaches from the can and discard (or drink) most of the juice. Put the peaches in a buttered baking dish. Leave enough peach juice to gel with Xanthan Gum, Pyure Stevia and Cinnamon. In mixing bowl mix 1/2 tablespoon of Xanthan Gum, 1/2 cup Stevia blend, 1 or 2 teaspoons of cinnamon, dash of nutmeg.  Sprinkle over the peaches and turn with a spatula until peaches are coated. Bake at 350 degrees F for 45 minutes.

Topping:  Use the Oatmeal Crumble topping using the directions above.
