Skinny Chocolate Cheesecake with Stevia and Almond Meal/Medjool Date Crust

The Cacao Powder Chronicles

I’ve been experimenting with adding Cacao Powder to all my standard Stevia skinny desserts. In the picture above I added 4 tablespoons of Cacao Powder to 3 packs of 1/3 Less Fat Cream Cheese, Stevia, eggs, vanilla extract, and lemon to experiment with Chocolate Cheesecake. I added chopped walnut topping on this pie.

For this Skinnier Cheesecake I used 6 Medjool Dates, and 3/4 cup of Almond Meal, and 1.5 teaspoons of Pumpkin Pie Spice, in a small food processor on Grind, makes 2 pie crusts. I dish it out in one heaping spoonful at a time to add it evenly around 2 buttered pie pans. Tamp down lightly, not smash-packed.

I’ve only had one piece, and as always I think it should be sweeter. I recommend 1.5 cups+ of powder Stevia in the Raw and some extra liquid Stevia, and maybe even a few tablespoons of Maple Syrup. And 4 tablespoons of Cacao Powder may not be enough, I might try 6 tablespoons the next time.

When you have a pie that’s not quite sweet enough just drizzle a couple teaspoons of organic maple syrup on it before adding the Redi Wip topping.  Delicious.
