Skinny Cheesecake & Graham Cracker Crust Only 77 Calories Per Slice

One of my favorite desserts is cheesecake. I try to limit real sugar cheesecake to once a week normally while dining out.  But for everyday lower calorie and almost sugar free cheesecake I make my own. I use Fat Free Cream Cheese and Stevia (instead of sugar) and a real graham cracker crust and butter to drastically limit the calories to less than you would consume in a breakfast, energy or protein bar.

I don’t really advocate a lot of baking with aluminum. I just occasionally buy an organic or granola pie crust and have dozens of these pie pans with plastic lids that stack easily in the refrigerator because I normally make two thinner pies. Look for a couple glass baking dishes with lids that stack

Because Maltodextrin spikes blood sugar I suggest replacing (stop using) any Stevia sweetener cut with Maltodextrin.  Right now I’m trying Pyure Organic Stevia cut with Organic Erythritol instead of Maltodextrin. My latest skinny cheesecake recipe was lost in the recent attack on this  blog site.  I want to quickly replace the lost recipe and document it for future reference. I’m constantly tweaking and updating this recipe.

The following recipe can be used for 2 thinner pies or 1 thick pie. The easiest way to cut calories in half is to make 2 pies. Using Fat Free Cream Cheese drastically reduces calories even more; compare them at the store.

Crust:

The preformed graham cracker pie crusts you buy at the store are like 880 calories or 110 calories for a small slice and up to $3.  You can make your own for about 25 cents using 6 graham crackers and a tablespoon of butter. The preformed graham cracker crust is 110 calories a slice; the do-it-yourself graham cracker is only 31 calories and 90% cheaper. Most graham crackers are made with real sugar instead of high fructose corn syrup and no MSG.

6 Graham Cracker sheets – 65 calories ea X 6 =  390 calories

1 tbsp Kerry Gold Butter (clean) = 100 calories

Total 490 calories for 1 pie (61 calories small slice)

Total 245 calories per pie for 2 pies (31 calories small slice)

Crush or blend 6 sheets of graham crackers (no HFCS or MSG brands) to crumbs and add 1 tablespoon of melted clean butter. Stir or blend in small blender ($10 at Dollar Stores).  Spoon out equally into two buttered pie pans, then use a fork to smooth out just slightly up the side. The thinner pies don’t need much crust up the sides. Tap down lightly with your fingers. I’ll normally put the crust in the oven while it’s preheating.  Watch it, don’t let it burn.

Cheesecake Pie Mix:

2 blocks of Fat Free Cream Cheese –  240 calories ea = 480 calories

2 cups of Stevia in the Raw* (or 2 cups of sugar) = 0 Calories

3 Large Organic Eggs – 70 calories ea = 210 calories

1 Tablespoon  of real Vanilla Extract =  40 calories

1 Tablespoon of Lemon Juice =  3 calories

Total 733 calories for 1 pie

Total 367 calories ea for 2 pies

Mix all the ingredients together in a Walmart $30 Black and Decker food processor.  Let it mix for several minutes to make sure you’ve mixed all the Stevia in the Raw into the Cream Cheese so you don’t get raw cream cheese pockets. Put in a 350 degree preheated oven for about 25 minutes for 2 pies.  Add another 5 to 10 minutes for just one pie. When the top starts to brown pull them out.  Once out of oven let cool. After the pies have cooled you can quick chill by putting them in the freezer for 30 to 40 minutes then refrigerate.  The pie is better the next day after the ingredients marinate together.

It’s not exactly like real sugar cheesecake but its very close for less than 100 calories a slice.  Smothered in thawed frozen strawberries (Thawberries) and Reddi Wip topping make it a fairly healthy dessert.

Calories One Pie:

Crust 490 calories + Pie Mix 733 calories = 1,223 Total

152 calories for a small slice (1/8th)

204 calories for a large slice (1/6th)

Add 45 calories of Reddi Wip real cream topping.

Calories Two Pies:

Crust 245 cal + Pie Mix 367 cal = 612 Total Caloris

77 calories for a small slice (1/8th)

102 calories for a large slice (1/6th)

Add 45 calories of Reddi Wip real cream topping.

* Replace (stop using) any Stevia sweetener cut with Maltodextrin.  Right now I’m trying Pyure Organic Stevia. Until I have time to blog about this click on the search links to find out why.
