After you read a hundred salad dressing labels you start to understand a few tricks the salad dressing industry uses to turn a cheap bottle of water into a thick, creamy low calorie $3 bottle of salad dressing, without all the oil calories.

The secret …….. drum roll please……….. Xanthan Gum, it’s a thickener used in many low calorie, water-based salad dressings.

Recipe to replace 120 calorie per tablespoon of olive oil with zero calorie water:

–  1/8 to a 1/4 teaspoon of Xanthan Gum per cup of water to turn it into a creamy oil-like consistency.

Look at the first ingredient below, and the last ingredient below. It’s this way on most low calorie dressings. You’re paying $3+ for a bottle of water with about a quarters worth of other ingredients. We get suckered into paying way too much for a bottle of water with a handful of cheap ingredients. This trick makes me want to start a salad dressing business. The markup and profit margin has to be huge.
